My backlinks in google went from 5 one dayto 28 the next back to 5 for about 2 weeks, then back to 28 again for about 3 days, and finally its back home to 5 again. I haven't really made any changes. Maybe it has to do with the sites that link to me?

GOogle never shows real backlinks to your site, from your situation it seems you are hitting different set of results delivered from different datacenters. No worries this is just normal with google,
